So I’m sitting, watching Biggest Loser last week thinking to myself, dang, Self, I could go for some chocolate cake right now. Only, as usual, we are fresh out of chocolate cake around here, so I contemplate making a chocolate cake, in fact I’m pretty sure I have a box of cake mix… or maybe brownies? Would brownies do the trick? No, no, no that is far more commitment and calorie burning effort than I am willing to put in for a piece of chocolate cake. Scratch that. I find some chocolate chips in the cupboard and gnaw on those instead.
Fast forward to date night that week when DanO and I are in a bookstore, drooling over Pioneer Woman’s cookbook, and not but feet from me on the shelf sits a little book titled 101 Recipes for Microwave Mug Cakes, complete with a picture of a chocolate cake in a coffee mug on the cover.
O yes, folks, this is no lie. I would not pull your leg about this.
So what do I do? Open up to the chocolate cake page and rote memorize me a recipe, of course! Only, I’m pretty sure that reproducing content from a published book is straight up illegal, so I tweaked it and made my own version of a chocolate mug cake recipe (with some help from the interwebs) and that is what I have for you here:
Ingredients:
1/4 Cup flour
1/4 Cup sugar
2 Tablespoons cocoa powder
1 Egg
3 Tablespoons milk
3 Tablespoons vegetable oil
1 Teaspoon vanilla extract
Instructions:
1. Combine dry ingredients in a microwave safe mug (I used an over-sized Starbucks one which meant that my cake didn’t go spilling up and over the edge as it cooked and rose.)
2. Add the egg, mix
3. Add milk, oil, and vanilla, mix well
4. Cook in the microwave for 5 minutes
5. Place the mug upside down on a plate and let cool (Once it is cool, make a pass with a butter knife around the inside of the mug to loosen the cake.)
6. Devour your chocolate cake, exactly 9 minutes after you had the craving for it
{Serving suggestion: Top with Cool Whip. O, and I do so suggest it.}
That looks so very yummy!! Now I’m going to have to try that…
Does it work?! I tried one of these before and it flopped. Big time. Totally was burnt and runny all at once and it was awful. :/

that’s the weirdest thing I’ve ever seen. Ever. It looks like a weird texture too. Like if you poked it, it would jiggle.

It wasn’t the cake-y-est cake, if you know what I mean, but it wasn’t exactly jiggly either.
It really was yummy and totally met my expectations, although, I was not expecting miracles from a coffee mug and 5 minutes in my microwave.
(I am tempted here to say something about having my cake and eating it too, but I will refrain.)

O Yummy! A chocolate cake in a mug that cooks in 5 minutes … now that is fantastic! I am for sure going to have to give that a try. Except I don’t have any cool whip. Oh what’s a girl to do?
I’d take Babe_Chilla’s advice if I were you: PEANUT BUTTER.
But if you add peanut butter, you will definitely need a glass of milk (and if you give a mouse a glass of milk…).

Oh my gosh! I have totally done this before! I love it :) My dad also makes eggs in a mug so you can make your own mcmuffin at home :) It’s soooo good!

My husband’s grandmother sent me this recipe a while back, but I never tried it. It looks so tasty I might have to try it later!
Yumm!! A really good treat for a chocolate fix is a Luna bar- the caramel nut brownies are the best of the best. 180 calories, like your whole day of vitamins and protein. I keep them in my desk, at home, the diaper bag, my car etc… a guilt free, good for you snack that fill syou up. I used to try the 100 calorie candy bars but would eat the whole dang thing because how do you stop once you start?!
We just made this, using a hot chocolate packet instead of the cocoa. It was quite tasty. Thanks for sharing!!
I tried this cake recipe few hours ago but somehow couldn’t achieve the same result as you, my cake clearly wasn’t looking that good (atleast it tasted good). What sort of chocolate are you using? Maybe it’s because of the flour I used, so I used quinoa flour instead of usual wheat flour.
